Weekday Meals & Brands We're Loving

AmyLu Chicken
Meatballs & Burgers

These products have minimal ingredients, and they're done in the airfryer within 6-7 minutes. They make week day dinners so easy! We use them for burgers, pastas, paired with a simple salad & veggies, or one of our favorites, mixed with cherry tomatoes, mini cucumbers, and tzatziki on a pita for a Greek-inspired meal.

Carbone's 

I am the person that usually adds additional seasoning to shelf stable pasta sauces to add a little extra flavor. However, Carbone's is the only pasta sauce that I don't believe needs an additional flavor boost. You definitely have to pay a little extra for their products, but the quality & flavor are worth it! Our family favorite is the spicy vodka sauce, but until Luca is a little older, the regular vodka sauce does the trick!

Painterland Sisters Skyr

These yogurts are simply fantastic - the company is women-owned and these sisters have a beautiful story of growing up on a farm in Pennsylvania. Protein packed, not too sweet, as rich & creamy as you could possibly want, and the company is focused on sustainable farming practices too. My take on these is the closest farm to fridge yogurt that you could get at a grocery store. 

Stoneyfield Organic

The fruit & veggies yogurt pouches are a Luca favorite, and they make packing daycare snacks/lunch a breeze. On the weekends he will go to the fridge and point to where we keep his pouches so we can get them for him. However, he is a big fan of the Painterland Sisters Skyr, and will steal mommy & daddy's yogurts if he sees us with them. 

Once Upon a Farm

For baby number 1, we proudly pureed fruits and veggies. What a dream! Life is simply too full these days, so we rely on Once Upon a Farm to fill the gap for us. With delicious flavors, probiotics, grains, and other ingredients that help nourish our second baby, these cold-pressed fruit & veggie pouches have been a life saver, and will continue to be for baby number 3!

Applegate

Generally speaking, I have not had an Applegate product that I haven't loved. I am a big fan of their chicken nuggets (original AND gluten free!), and they're a great birthday party item if you don't want to do the typical pizza option. However, what we regularly buy is the ready to cook (RTC) bacon. It's legitimately the best (in our humble opinion) and we use it to make bacon & egg scramble/tacos for the kids and BLTs for us. Pop it in the airfryer and it's less messy with the perfect texture!

Our Favorite Recipes & Dishes for Special Occasions

Enchiladas Verdes

Make your own salsa verde, it's easy, and worth it! Blend 12-15 tomatillos (roasted or boiled), 1/4 of a white onion, 2 garlic cloves, about 6 sprigs of cilantro, 1-2 roasted poblano peppers (make sure you sweat them), a spoonful of Knorr, and salt & pepper to taste (add about 3/4 of a cup of water). We recommend a ready to cook corn tortilla (coat a pan with some oil and cook prior to assembly) and rotisserie chicken for the filling. Then roll them up, cover in your salsa verde, and top off with your favorite shredded cheese (highly recommend queso Chihuahua, but a Mexican blend will do).

Bake at 350 degrees for 25 mins and enjoy!
